Thai Lovers- Enjoy Curry

Ingredients

  • 100gm lean cuts of chicken
  • Kosher salt and freshly ground black pepper
  • 1T red curry paste
  • 3tsp freshly grated ginger
  • 100ml of coconut milk
  • 25gm broccoli, cut into pieces
  • 25gm onions stalk, thinly chopped
  • 1tbsp chopped fresh cilantro leaves
  • 1/2tbsp freshly squeezed lime juice
  • ½ tbsp. oil

Steps

  • Heat oil in a large stockpot over medium heat. Season chicken with salt and pepper, to taste. Add chicken and garlic to the stockpot and cook until golden, about 2-3 minutes.
  • Stir in red curry paste and ginger until fragrant, about 1 minute.
  • Stir in coconut milk. Bring to a boil; reduce heat and cook, uncovered, stirring occasionally, until reduced and thickened, about 10-15 minutes.
  • Stir in broccoli until just tender, about 3 minutes.
  • Remove from heat; stir in onions stalk, cilantro and lime juice; season with salt and pepper, to taste.
  • Serve immediately with rice.
