Nutritional Pearl Millet (Bajra) Dosa

Ingredients
- 1 cup pearl millet
- 1/3 cup rice flakes (poha)
- 1 teaspoon salt
- 2 cup of water
- 1/4 cup urad dal
- 1 teaspoon fenugreek seeds
- 2 tsp refined oil
Steps
- Wash and soak Bajra/millet, urad dal, fenugreek seeds overnight. Prior to grinding, soak the rice flakes in water for 15 to 20 minutes.
- Drain the water from the dal and millet mixture. Grind into a fine paste along with the soaked rice flakes using the water in which the grains were soaked as they retain the water-soluble vitamins.
- Leave this batter to ferment overnight or until you see tiny bubbles over the top. Next day add salt to taste and adjust the consistency to spreadable thickness.
- Heat a tawa until hot and pour a ladle full of batter and spread it in a circular motion like regular dosa. Cook until golden on the lower side.
- Serves hot with sambar and chutney.
