Nutritional Pearl Millet (Bajra) Dosa

Ingredients

  • 1 cup pearl millet
  • 1/3 cup rice flakes (poha)
  • 1 teaspoon salt
  • 2 cup of water
  • 1/4 cup urad dal
  • 1 teaspoon fenugreek seeds
  • 2 tsp refined oil

Steps

  • Wash and soak Bajra/millet, urad dal, fenugreek seeds overnight. Prior to grinding, soak the rice flakes in water for 15 to 20 minutes.
  • Drain the water from the dal and millet mixture. Grind into a fine paste along with the soaked rice flakes using the water in which the grains were soaked as they retain the water-soluble vitamins.
  • Leave this batter to ferment overnight or until you see tiny bubbles over the top. Next day add salt to taste and adjust the consistency to spreadable thickness.
  • Heat a tawa until hot and pour a ladle full of batter and spread it in a circular motion like regular dosa. Cook until golden on the lower side.
  • Serves hot with sambar and chutney.
