Homemade Bean salad

Ingredients
- Ingredients: (1cup=200gm)
- 30gm kidney beans (rajma), cooked
- 30gm black-eyed beans (chowli), cooked
- 1 cup cherry tomato halves
- 2 small cucumbers, thinly sliced without pealing
- 1/4 big onion, thinly sliced
- 1/2 cup black olives, halved
- 1/2 cup green olives, halved
- 1 cup assorted colorful bell peppers, diced
- 1/2 cup crumbled low-fat feta cheese/cottage cheese
- 5-7no. basil leaves, shredded/dried basil herd 2-3tsp
For the dressing
- 2 Tbsp extra virgin olive oil
- 4 Tbsp vinegar, or more to taste
- 1 tsp dried mixed herbs
- 1 garlic clove, minced
- salt and black pepper to taste
Steps
- Whisk the dressing ingredients together
- Put the beans in a large salad bowl. Add all the other ingredients and toss with a generous amount of the dressing.
- Serve fresh.
