Homemade Bean salad

Ingredients

  • Ingredients: (1cup=200gm)
  • 30gm kidney beans (rajma), cooked
  • 30gm black-eyed beans (chowli), cooked
  • 1 cup cherry tomato halves
  • 2 small cucumbers, thinly sliced without pealing
  • 1/4 big onion, thinly sliced
  • 1/2 cup black olives, halved
  • 1/2 cup green olives, halved
  • 1 cup assorted colorful bell peppers, diced
  • 1/2 cup crumbled low-fat feta cheese/cottage cheese
  • 5-7no. basil leaves, shredded/dried basil herd 2-3tsp

For the dressing

  • 2 Tbsp extra virgin olive oil
  • 4 Tbsp vinegar, or more to taste
  • 1 tsp dried mixed herbs
  • 1 garlic clove, minced
  • salt and black pepper to taste

Steps

  • Whisk the dressing ingredients together
  • Put the beans in a large salad bowl. Add all the other ingredients and toss with a generous amount of the dressing.
  • Serve fresh.
