Ingredients

  • Brown basmati rice – 30gm
  • Lean cuts of chicken – 50gm 
  • Hung curd/ slim curd + olive oil – 50gm
  • Poppy seeds – ½tsp
  • Black sesame seeds – ½tsp
  • Melon seeds – ½tbsp
  • Onion – 25gm
  • Carrot – 10gm
  • Capsicum – 15gm 
  • Corn – 15gm
  • French beans – 15gm 
  • Cauliflower – 10gm
  • Baked baristas – 10gm

Steps

  •  Prepare the marinade for the chicken with hung curd and olive oil, marinate the chicken in the prepared     marinade for 1 ½ – 2hrs
  • Soak the rice for 15mins in double the amount of water.
  •  Finely chop the vegetables and prepare the dry masala. Soak the melon seeds for 10-15mins and make a fine paste out of it.
  • Heat oil in the pan. Saute the onions till golden brown, add in the masalas with the seeds and the paste. To the masala and onion add in the remaining vegetables with the marinated chicken. Cook on low heat till the vegetables and chicken get cooked.
  •  Heat oil in a pan adds the bay leaf and clove, saute the soaked rice for a few minutes and add the water in which the rice was soaked to the rice and cook till the rice gets almost cooked and separated.
  •  Fill a wok/kadhai with alternate layers of rice and masala. On low flame let the masalas blend with the rice over sigdi/coal. ( or place the kadhai on a tava which is on the direct flame and cover the kadhai with a mud based tava).
  • Garnish the biryani with the baked barista and serve hot!
