Ingredients
For the kofta:
- Low fat paneer (cow’s milk) – 40gm
- Chana flour – 20gm
- Carrot – 10gm
- Dudhi – 20gm
For the curry:
- Spinach – 100gm
- Onion – 50gm
- Tomato – 25gm
- Coriander – 5gm
- Mint leaves – 5gm
- Hung curd with olive oil – 20gm
- Melon seeds – 1tbsp
For garnish
- Hung curd – 5gm
- Mind leaves – 2 to 3 no.
Steps
For the kofta:
- Grate the carrot and bottle gourd (dudhi). Mix in all the ingredients and make small balls.
- Heat the appam pan and in a small drop of oil roast the koftas.
For the currry:
- Blanch the spinach. Chop the vegetables
- Heat oil in the pan, add in the chopped onion and saute till golden brown, add in the masalas and cook.
- Now add in the tomatoes and cook till they become soft.
- Cool the masala mix and blend it with the blanched spinach, coriander, and mint leaves.
- Cook the paste on look flame and add in the hung curd with olive oil.
Plating:
- In a bowl take the curry, add in the kofta and garnish with hung curd and mint leaves.
- Serve hot.
