Homemade Mediterranean Wrap

Ingredients
- 15gm quinoa
- 5-6no. chopped fresh mint leaves
- 5ml lemon juice
- 10ml olive oil
- 2 t minced garlic0gm chicken tenders
- 25gm tomato, chopped
- 10gm cucumber
- 1no. tortilla wrap
Steps
- Bring water (double the amount of quinoa) to a boil in a small saucepan. Stir in quinoa and let it cook until the water is absorbed. Set aside.
- Meanwhile, prepare a mixture of mint, lemon juice, oil, garlic, salt and pepper in a small bowl.
- Toss chicken tenders in a medium bowl with 1 tablespoon of the mixture. Place the tenders in a large nonstick pan and cook over medium heat until cooked through, 3 to 5 minutes per side. Transfer to a clean cutting board. Cut into bite-size pieces when cool enough to handle.
- Stir the remaining mixture into the quinoa with tomato and cucumber.
- Now, spread about a cup of the couscous mixture onto each wrap. Roll the wraps up like a frankey, tucking in the sides to hold the ingredients in.
- Serve cut in half.
