Delicious Rose Malai

Ingredients

  • Wheat flour – 20gm
  • Rava – 10gm
  • Low fat cow’s milk – 150ml
  • Seetaphal – 20gm
  • Gulkand – 15gm
  • Pistachio – 5gm
  • Almonds – 5gm
  • Cow’s ghee – 10gm
  • Rose petals – 2to3no.
  • Egg white – for wash

Steps

  • Pre-heat the oven.
  • Cream the ghee in a bowl, add the wheat flour and rava and make a hard dough.
  • Take small pieces of the dough and shape them into rose petals.
  • On a greased tray arrange the dough petals in the shape of a rose. Give a thin layer of egg wash.
  • Bake the rose for 10-15mins at 180oC or till golden brown.
  • Pulp the seetaphal.
  • Heat the milk on a low flame in a thick bottomed saucepan.  Keep stirring the milk to prevent burning at the bottom. The mix would begin to thicken.
  • Scrape the milk solids from the side and collect the cream collected on the top and mix it back the thickening milk. Let it thicken for 20-25 mins
  • By the end add in the seetaphal pulp and gulkand, mix well in the thickened milk.
  • Cool the condensed milk.
  • Removed the freshly baked roses and dip it in the condensed milk to get a thick coat over the petals.
  • Cool the roses to let the condensed milk hold its shape.
  • Garnish the roses with chopped pistachio, almonds, and rose petals.
  • The rosemalai is ready to be served.
