Shrimp Fried Rice

Healthy shrimp fried rice

Ingredients

  • 30gm brown rice
  • 30gm sprouts
  • 30gm onion, chopped
  • 100gm cooked medium shrimp, peeled and deveined without tail
  • 15gm onion stalk, chopped
  • 1T soy sauce
  • 1 ½ T oil

Steps

  • In a saucepan bring water to a boil (double the quantity f rice). Add rice and stir.
  • Reduce heat, cover and simmer for 15-20 minutes. Set aside and allow the rice to cool.
  • Heat a large pan or wok for 2 minutes. When the wok is hot, pour in vegetable oil, sprouts, and onions.
  • Mix well and cook for up to 3 minutes.
  • Mix in cooled rice and shrimp and cook for another few minutes. Stirring constantly.
  • Mix in green onions, salt, pepper and soy sauce. Cook for another 4-5 minutes, stirring continuously until everything is blended evenly.
  • Serve fresh.
