Healthy shrimp fried rice

Ingredients
- 30gm brown rice
- 30gm sprouts
- 30gm onion, chopped
- 100gm cooked medium shrimp, peeled and deveined without tail
- 15gm onion stalk, chopped
- 1T soy sauce
- 1 ½ T oil
Steps
- In a saucepan bring water to a boil (double the quantity f rice). Add rice and stir.
- Reduce heat, cover and simmer for 15-20 minutes. Set aside and allow the rice to cool.
- Heat a large pan or wok for 2 minutes. When the wok is hot, pour in vegetable oil, sprouts, and onions.
- Mix well and cook for up to 3 minutes.
- Mix in cooled rice and shrimp and cook for another few minutes. Stirring constantly.
- Mix in green onions, salt, pepper and soy sauce. Cook for another 4-5 minutes, stirring continuously until everything is blended evenly.
- Serve fresh.
