Healthy Egg Brown Fried Rice

Steps

Ingredients: (1cup = 200g)

  • 2 med eggs
  • 2 teaspoons olive oil
  • 1 big chopped onion
  • 2 crushed garlic cloves
  • 1 finely chopped red chili
  • 50gm zucchini, chopped
  • 50gm baby corn, chopped
  • 1 large head chopped broccoli (small pieces)
  • 1 large thinly sliced carrot
  • 150g roughly chopped green beans
  • 2 cups long grain brown rice
  • 2 tablespoons soya sauce

Steps

  • Cook the rice, spread it over a side dish and let it cool.
  • Add salt and pepper to the eggs and beat. Heat the wok and add in a teaspoon of oil, add in the eggs to make a thin omelet.
  • Remove on a board and cut it into thin slices.
  • Add the remaining oil, onion, garlic, and chili to the wok and stir fry for 2 minutes. Increase the heat to high.
  • Add the remaining chopped vegetables and stir fry for 4-5 minutes or till they become cooked and crispy.
  • Now add in the cooked and cooled brown rice to the wok and stir for about 3 minutes till it is completely coated.
  • Serve hot.
