Healthy Egg Brown Fried Rice

Steps
Ingredients: (1cup = 200g)
- 2 med eggs
- 2 teaspoons olive oil
- 1 big chopped onion
- 2 crushed garlic cloves
- 1 finely chopped red chili
- 50gm zucchini, chopped
- 50gm baby corn, chopped
- 1 large head chopped broccoli (small pieces)
- 1 large thinly sliced carrot
- 150g roughly chopped green beans
- 2 cups long grain brown rice
- 2 tablespoons soya sauce
Steps
- Cook the rice, spread it over a side dish and let it cool.
- Add salt and pepper to the eggs and beat. Heat the wok and add in a teaspoon of oil, add in the eggs to make a thin omelet.
- Remove on a board and cut it into thin slices.
- Add the remaining oil, onion, garlic, and chili to the wok and stir fry for 2 minutes. Increase the heat to high.
- Add the remaining chopped vegetables and stir fry for 4-5 minutes or till they become cooked and crispy.
- Now add in the cooked and cooled brown rice to the wok and stir for about 3 minutes till it is completely coated.
- Serve hot.
