Thai Lovers- Enjoy Curry

Ingredients
- 100gm lean cuts of chicken
- Kosher salt and freshly ground black pepper
- 1T red curry paste
- 3tsp freshly grated ginger
- 100ml of coconut milk
- 25gm broccoli, cut into pieces
- 25gm onions stalk, thinly chopped
- 1tbsp chopped fresh cilantro leaves
- 1/2tbsp freshly squeezed lime juice
- ½ tbsp. oil
Steps
- Heat oil in a large stockpot over medium heat. Season chicken with salt and pepper, to taste. Add chicken and garlic to the stockpot and cook until golden, about 2-3 minutes.
- Stir in red curry paste and ginger until fragrant, about 1 minute.
- Stir in coconut milk. Bring to a boil; reduce heat and cook, uncovered, stirring occasionally, until reduced and thickened, about 10-15 minutes.
- Stir in broccoli until just tender, about 3 minutes.
- Remove from heat; stir in onions stalk, cilantro and lime juice; season with salt and pepper, to taste.
- Serve immediately with rice.
